Happy EL Cuarto... Pre-Cinco De Mayo!  I am just going to lay it out there...marinate a chunk beef roast for about 3hrs.  Then crockpot the beast for another 4hrs with FL orange, Lemon/Lime, cranberry + apple juices, an IPA brew, EVOO and unsalted butter; a whole stick or stick&half...@ the last moment before locking him up, pour on some E&J and white wine vinegar.  When complete, sprinkle some mediterranean sea salt, ground black pepper, and a few shouts of A-1 Rub...bake for 5 min @ 325d.  Dress him up, take a shot of sweetness or something taking the edge off the exhaustive, extra long day...Blake Odom, said, "Damn" then devoured 2 fat ones...thank god I got mine!  Make it a day 2 'R.E.L.A.X'!
