BlackTino Fried Chicken Throwdown

Well, hello there, are you guys hungry?  How about some love from the heavens...where Pinto/Black Beans meet up with Spanish style rice and Lousiana fried chicken too have a fiesta!  Here are a few hints of how to make the fried chicken:  Soak in beer butter, white wine vinegar, Lousiana hot sauce, cajun spices, black/red cayenne pepper, jalapeno juice, Italian dressing and garlic salt.  The rest is up to your taste buds.  This is the time we all need to, "get along" and eat with one another at a table.  Happy #BlackTino eating...

Chili Bean Turkey Sopa

The rain is pounding, the lighting is spreading fear and behold the power of thunder threatening the lands.  But, we will not bend to the heavens...just yet.  At least not until you have had this heavenly soup for more than the soul.  Just throw all the leftover juices, fancy broths into one big boy pot.  Then, use the remaining turkey meat, bones wanted.  Steam some rainbow noodles in beer, butter, a touch of honey, vinager, fresh garlic cloves and some earthly herbs of choice.  I used Italian seasoning and 3 Elquapo bay leaves.  Hopefully, the onion, celery was part of your turkey creation.  However, if not, they are stars of the soup...gettem' in.  This absolute change of taste-innovation will sneak-up on the palate, especially after adding some drained chili beans! Should take about 2 hours of simmering.  Then bring the family to the table, cuz "Baby It's Cold Outside" come heat up.

Spicy Grilled Fat Boy Chops

Welcome to the cold days of December and a change of pace.  This beast, right here...is gold!  So all one has to do is grill-up a hefty-big boy chop, pretty simple?  Well, the trick this time is your marinated sauce.  Try some soy, Worcestershire sauces, 211 Steel Reserve, hot sauce, Italian dressing, salted butter, cayenne pepper, garlic salt, paprika, oregano and lastly, dump in a half cup of salsa.  Then toss it all in a ziplock, pound it up a weebit...chill for 2 hours or whenever ready to grill.  Once complete the butt of your fork should pierce through no problemo.  "Eat Well And Life Will Be Your Friend" C.G.M

Fire Sausage Ramen Soup

Happy, HumpDay!  How bout' instead of that boring breakfast that you are making...about to make or might have already devoured.  This is a heat lover's hot/spicy, wake me the hell up-type of poor man's ramen breakfast...broiled until the skin recedes.  We are packing some seriousness here folks...a fat succulent Louisiana born hot link, marinated/soaked in Louisiana hot sauce, cayenne red & black pepper, red flakes, fresh jalapeno juice, a touch of gochujang, EVOO Italian dressing/herbs, butter, minced onion, white wine, and a shot of honey mead.  Appears pretty simple, so try it and #GetUp!

Cheeseburger Potato & Bean Sprout Soup


So it is slightly chilly outside in the A.M of the hot desert.  Whereas, soup for the soul may brighten the day or even that missed home aroma.  However, this is not that normal stuff.  We have my favorite three-sum...butter, beer, vinegar!  Then add some EVOO Italian dressing, black/cayenne -red pepper, flakes, fresh garlic cloves, green chives, bean sprouts, hamburger, soy sauce, steamed potatoes and the star of the show is 'Mr. Cheesy.'  This package consist of 5 kinds of cheese, melted masterfully throughout the simmering phase.  Toss all this love in one pot and voila, let your taste buds be on guard for this war.  Happy slurping!

'Hot Potato' 2 Potato' Breast Soup

It is time for the cold monsters to hobble in and take over the hot scene.  However, this heat soup will not bow down to the shivers.  Wake up and smell some of this!  Packed with marinated rum chicken breast, yellow/green onions, fresh garlic, paprika, cayenne/black pepper, hot sauce and white wine vinegar.  Then dice up some red potatoes that didn't miss her, cream of mushroom, plus hidden within the deep are fresh shrooms...keep it movn'!

Spicy Chip Salad

It is that time of day when one might need some natures energy.  Your eyes aren't deceiving the brain...it is a spicy chip salad!  Simple as is, toss yours, however, liked...top off with a weird chip or common favorite dressings.  I chose blue cheese cream/olive oil vinaigrette. Have fun stop boring those taste buds with croutons and #GoChips!

Happy Saturn's day, to others it may be Saturday...neither there or here, but this pork chop is here on our planet today.  I apologize that it is not available for everyone, LMAO...But I shall shine some light on thy palate that won't let your morning down.  Stop just eating cereal, get that big kids jump.  So sear-up that chop soaked in beer, butter, red wine vinegar & hot sauce.  Turn white wine rice into red wine Spanish fried rice, with a hot cinnamon ketchup and herbal it up with some Italian life.  Then tackle with no mercy!

Rum Brownie Frozen Custard

Good A.M beautiful world.  They say,"Milk Does A Body Good"...How about this silky desert!  This ain't your mama's frozen custard, well it could be...because it is drenched with rum, layered with a decadent chocolate brownie and the cream is packed.  As a matter of fact, it is heavy like a brick, no skimping here.  Then top it off with your favorite dark soda pop.  I chose to be different and use Pepsi/most use root beer. Freeze overnight & shake up your morning, with a kick.  One can see the carbonated bubbles trying to escape, but not today...#YumItDown.

Oregano/Garlic BBQ Buffalo Limbs

Last night I was baked...I mean baking these twice cooked limbs to the meat cried.  We all had twice baked potatoes, so why not these guys. Anywho, it is still pretty basic.  Just add a little water, J/K.  The truth aside these were fried, baked & a quick broil for that fast acting sear. The secret is beer, butter, & red wine vinegar...shakes of garlic salt, oregano, paprika, hot sauced and topped with sweet/spicy 'baby rays'.  Enjoy with a crisp steel reserve. Spicy 'Good Burger'

Hello Tuesday!  Wishing the very best and most adventurous day to you beautiful people.  This morning burger is packed with the punches...And, the above display is already dancing around on those hungry minds, you are getting hungrier by the minute...right?:-) Well get up and make it!  Who says you can't have a "mean machine" in the A.M, plus a great preload for the workout party.  Now, you can make a nice fresh spicy salsa or grab your fav; peperoncini, a half sliced hot fat pickle, spicy mustard, sour cream & onion dip/ranch dressing; mixed, garlic + butter toasted buns.  And mix yellow onions inside the meat burger. Carlo's Ground Burger Mulatto Tomato Soup

Good early morning for some.  This is just a simple tomato based dish, but with a kick.  So you wanna try and create this?  Okay, here we go. First steam your mato's so that the flesh resends off the body. Then add cayenne, red pepper flakes, paprika, Italian herbal mix, garlic & parmesan salt, slice a yellow onion; thin, not square, it really does change the taste. It's kinda like making your favorite spaghetti, but no carbs.  Do a little dance and shake some 4 blend Sorrento kinds of cheeses...then a shatter of fresh parmesan, not the bottle. Top with green onions.  That wasn't so difficult was it, enjoy...thank me later;-).

Cinnamon Spiced Veggie Meatloaf & Ground Beef Gravy

All I have to say is Meatloaf and Gravy! We that cook know how to create a square baked burger right? Okay, it's a meatloaf,  LMBO.  So, anyway make yours, but add a veggie pack twist...kick it up with a cinnamon based spicy ketchup...With those left over fatty juices make a ground beef gravy. Phx Cardinals Jalapeno Veggie Garden!


It is almost game time, so take a gander @ my cardinals red garden. Filled with mandarin oranges, green onions, radish, jalapenos, red/orange bell peppers...whoop, had to breathe, lol.  Then, grab a bowl or whatever whisk in some smooth Kraft Ranch/tangy Italian dressing and the peno juices will set it off.  Chill for about 10min, so that the flavors bond a bit.  Top off with that sharpness.  Eat freely and then hit the wings. #GoPhxRed!

Good Saturday...Can we all say, "Amen!" This mac&cheese is not your boxed type, but it is made simple.  So, see what you can do with it.  I used ground beef and Louisiana fire sausages, 5 different kinds of cheese, fire flakes, lemon dill, rosemary, Italian herbs, parsely, garlic salt, black/cayenne peppers...And I squeezed with a concocted lemon tequila juice and EVOO(extra virgin olive oil )for a little more moistness...the rest is on you:-)

Kunlun Shan Tuna-Peach Garden!


This is for all you veggies consumers out there.  I am sure that all of you can cultivate and make a salad, but how about a twist...not a lemon twist, peaches...That juicy, smoothness, from the Kunlun Shan mountains.  And even though this is a stone fruit or drupe the sweet nectar will spike up that common or boring green, leafy family.  Then add some lemon grass tuna with EVOO(extra virgin olive oil),. Banna peppers, cucumbers, green onions, black pepper, equal shakes of garlic herb parmesan cheese, Italian spice, Ranch and shredded cheese. Chicharrones 5 Cheese Beefy MackDaddy!


Today based on the timeline of history, America drops its first atomic bomb.  And, on this day I bring you a new atomic upgrade.  This is the bomb Mac&Cheese!  Calm down, don't get all hot and stuff...but get ready for this family of noodles that really stick together.  So, slap some ground beef on a sizzling skillet; steam your pasta in butter, vinegar, honey, a spit of salt/pepper, season to taste thereafter.  Use a four cheese mix pkg, cut mozzarella sticks to dwindle down the melting time. The normal milk, butter, and more cheese will create that creamy feeling.  Start the ovens engine, ramping it up to about 350d for 15 min until all the love is surrendered within...smash some tortilla chips with chicharrones into a crumble and spread a generous amount across the top, kinda gives that flaky crust. This will update that palate of yours for sure.  Most of all remember to chill and have a relaxed Sunday.

Stew Me Crazy Spicy Nachos!




Hey, hey, hey it's almost Friday!  How about a change of pace for that last minute push. This appears to be pretty basic, but we all know it's Carlo made; twisted and deranged of course.  Just conjure up a lovely 4 meat stew., mine was completed in a previous post if one would like to view more ingredients:-). And, yes it must be crock-potted.  Then add some holly molly veggies, malibu rum, and your best seasoning skills will have to be present. However, not much house seasoning is needed as the concoction will flavor its' self.  Finale-it-up with the "V" as it melts graciously while blending with the other cheeses.  Spread with that chunky Caliente pace...chop some green chives and "Viva Loco."

Maybe this water based 100% delectable veggie bowl, will jolt or ignite your hype and energize that soul.  Everyone, can conjure up a green snack, but not like this...well at least not yet, lol.  Simplistically put, use the above ingredients.  Then invite some special guest, lets say, butter crackers; chili cheese chips and cheese sprinkles, replacing that old with that "New New!"  Don't forget to be generous with that dill/cilantro life, they are wild...Top her off with my concocted Ranch/Roasted Red Pepper mix.  Sip a Lemon Lime Mimosa and your off in the clouds.

Fire-Cracker Soaked Links & Bud Light Platinum Garlic Chops.


I hope that everyone had a great 4th, all went as planned and the safety bus took yall back accordingly.  We all are cognizant of what belongs on the griddle during these hot times...So this is no exception to the BBQ rules of engagement. The only difference here is that these babies soaked for 4 hours in cayenne, black pepper, Tapatio hot sauce, Slavo heat seasoning and Bud Light Platinum.  Then tossed in a few garlic cloves, Italian herbs.  And, you guessed it...butter everywhere.  By the way, I had to break my no meat diet for this special outing.  I hope all of the cool peeps that were there, enjoyed the feast, as this was a sporadic event.  Unfortunately, some will have to wait until the next round!

Miami Dolphins Fire Wings + Onion Garlic Cayenne Mashed Tatoes

Well, what a fantastically hot damn day!  So, why not some more fire.  It is baseball season and either you are out basting or frying in this AZ sizzler.  Anywho, how about some friendly fried wings and some fresh onion/garlic & cayenne mixed mashed tatoes!  This is a very basic fry, "even a caveman can do it!" So, do the egg wash thingy...be sure to pour some beer in with the wet batter, for the homies. Preheat the medium pot so that the oil doesn't burn.  Channel your basic frying techniques, but add the hot sauce before and after the wings are crispy.  Then, steam, don't boil them Russel potatoes with butter, EVOO, Italian dressing; until you can stick a fork in it. Check for that fluffy flaking appearance...add some even shakes of a ranch, a half bar of salted butter; invite some chives+paprika, pour a cold one...and just relax.

As the sizzling dwindles in AZ and the night crawls upon us...wouldn't a double burger + fries fit the moment?  Well, check these beefy beasts off your 'bucket list'.  It is pretty simplistic, just add water, LMBO...Just pattie-up some ground beef, chopped onions, garlic/herb season salt, slavo spice, some balsamic love and the hot juices of that jalapeno funk.  Then, griddle to medium rare, toast, butter, top those buns; eat.

Spanish Fly Pineapple Spiced Rum Cocktail ! Liquid Brunch?


The heat is already a performance of blazing ferocity and this shit ain't slowing. The moment of truth has come...are you a morning or mid-afternoon drunk, LMAO 10x? Neither there or here....your secret is safe with me.  Take a gander at this cocktail liquid breakfast. I am not a barista, but this will blow up the insides, with happy energy...I heavy-handed 3 shots of Bacardi, 2 shots of Coconut Malibu Rum, 3 small jalapeno rings, 2 shakes of our very own local spicy Spanish fly; from the Queen Creek olive mill. Then chop up some fresh pineapples, that has a wee bit more ripeness.  A little knowledgeable birdy suggested turning her upside down so that the sweet nectar saturates throughout. Then add about a quarter cup of some DDOJ...blend, preferably with crushed ice and quack away!

Lays BBQ Country Style Pork/Trail Mixed Ramen!

What a great morning!  This was a late night snack that popped into my head, while eating lays bbq chips and trail mix digging.  It is pretty easy.  Just marinate some country style ribs in some teriyaki, red wine vinegar, brown sugar, honey, beer and Italian dressing...Drop the meat on a hot griddle until cooked thoroughly, season up with garlic salt, black pepper, and paprika.  Let the noodles steam in butter and EVOO until they grow fatter. Chop up some green onions for that color and pop. Then add your trail mix and favorite chips.  "We Can Eat Poorly And Be Rich!" C.G.M

Vegetarian Lemon Dill Tuna Pasta Curls...


It hath been a long 12 days of no Carlo, LOL...And honestly, I have been truly exhausted and beat down from these disabilities. The heat is throwing upper punches and knocking folks out!  'Man O' Man' the world needs to chill out.  So, here's how: Steam some curly noodles in a half stick of butter, 1/3 of Italian dressing sauce, and sprinkle with garlic/herb seasonings...should only take 10-15 min on a medium boil. However, make sure to watch your noodles because they cook faster steaming this way; add water appropriately, until the curls are El, Dante.  Mix in all the veggies shown above.  Then roll out that magic carpet for the main ingredient of the dish...Lemon Dill Tuna and EVOO. Flip or toss around in a bowl, don't stir.  Top off with some more Italian dressing, green onions, and black pepper.  After chilling for bout an hour, enjoy the cold freshness, maybe add some watermelon chunks as your own twist!
