Fried Black Bean Rice Pork Belly Quesadilla...

So it was partially the boys weekend; Pete, Murphy(dog), Tazzy and the only other girly girl, Pretty, both felines.  And, as the globe rotated it brought much-needed peace and tranquility upon us!  I also had an oldie, but goodie stop by for this small gathering.  Since it was a nice sunny day in AZ we agreed on burros as that Latino fix.  However, it turned out to be even better.  Before Shara bounced with the adolescent granddaughters, she left a pre-done pork belly!  Needless to say, I kicked it up, slapped it around and voila we ended up with this seemingly small, but powerfully healthy quesadilla dish.  "If we try harder together, we shall survive the hell that's upon us."
